    • 2 tbsp Sindhi biryani masala
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 4 cloves garlic, minced
    • 1-inch piece ginger, minced
    • 1/4 cup fresh coriander, chopped
    • 1/4 cup fresh mint leaves, chopped
    • 4 green chilies, slit
    • 1/2 cup oil
    • Salt to taste
    • 2 cups water

    1. Cook the rice: Wash and soak the basmati rice for 30 minutes. Boil in salted water until 70% cooked. Drain and set aside.
  • 2.Prepare the chicken: Heat oil in a large pot. Fry the onions until golden brown. Add garlic and ginger; sauté for 2 minutes. Add chicken, Sindhi biryani masala, turmeric, red chili powder, and salt. Cook until the chicken is browned

  • 3.Layer the biryani: Add yogurt, tomatoes, green chilies, mint, and coriander to the chicken. Stir well and cook until the chicken is tender. In a separate pot, layer the cooked rice over the chicken mixture.

  • 4.Dum cooking: Cover the pot and cook on low heat (dum) for 20-25 minutes until the rice is fully cooked and flavors are well combined.

  • 5.Serve: Fluff the rice with a fork and serve hot with raita.
